Tasty Christmas recipe – traditional oatmeal stuffing with apple, apricot and cranberry

Follow these 5 easy steps to create the perfect traditional stuffing to accompany your Christmas turkey.

Ingredients

6 dried apricots, diced

55g fresh cranberries

Apple juice

1 Spanish onion, diced

1 grated Bramley apple without pips and core

250g good quality pork sausage meat

1 tsp chopped thyme leaves

55g melted butter

2 cups medium oatmeal

Salt and pepper


Method

1. Place the diced dried apricots in a small bowl with the cranberries and cover with apple juice – leave for 1 hour.

2. Fry off the diced onion in butter in a pan until soft and opaque, then allow to cool.

3. Place the oatmeal, sausage meat and grated apple in a bowl with the cooled onions and butter and mix well. Add the apricots, cranberries, thyme and enough apple juice to mix. Season to taste. Fry off a small amount to check seasoning.

4. Place in a greased loaf tin and cover with foil.

5. Bake alongside the turkey or by itself for 40 minutes in an oven preheated to 160°C. Cook until core temperature has reached 75°C.
