JOB PURPOSE

1. Purpose

The roles purpose is to manage multi-site catering and hospitality services enterprises within a Region of the National Trust for Scotland. As such, the purpose and value of the role covers the following key areas and aims:

1. People and Operations

Leadership of properties catering and hospitality staff, with staff (and managers where applicable) reporting directly. It is a matrix management structure with Operations/Property Managers holding overall management responsibility for respective properties performance and objectives. There is an operational and services focus with oversight of customer services, business development, staffing and resourcing, and planning components. This extends also to general visitor services.

2. Product offer and business development

The role is responsible for two areas in terms of offer and developing the business:

i. Overall responsibility for the design and ongoing development of the foods offer through properties restaurants/outlets and which are suitably tailored around visitor-customer characteristics and the heritage environment they are in.
ii. Overall responsibility for both the business development and operational-services standards of hospitality activities through the properties, including events and functions, venue hire and accommodation (serviced). This also extends to the Travel Trade e.g. tour operators.

For hospitality areas, responsibility includes business development and client relationships locally-regionally. However, s/he will work very closely in a coordinated way with the national Hospitality & Travel Trade Business Development Team in developing national and international client business and managing relationships.

3. Trading & Business Analysis

The role is responsible for effective knowledge and insight into the customer and competitive environment and, the performance of foods services and hospitality offers within the Region and its sites. A Business Manager will provide support and guidance on business analysis as part of business management within the Region. A NTS EPOS system will be managed locally in terms of inventory mgt. and sales analysis.




4. Compliance and operating practices

The nature of foods and hospitality require rigorous oversight of relevant safety, hygiene, health and practice standards. This includes for example: compliance and maintenance of serviced accommodation spaces (e.g. electrical, access, fire); food hygiene standards; health and safety during events; risk assessments; reporting obligations (e.g. hygiene diligence and monitoring), etc. Supporting services such as Buildings Services (Consultancy Services) are positioned within the Region to ensure technical advice and a regime of compliance, maintenance and monitoring is maintained and with the responsibility and accountability for these business areas resting with the Catering & Hospitality Manager.

5. Charitable aims, supporter development and volunteering

As part of a regional management team, the Catering & Hospitality Manager participates in and leads staff in promoting membership of the Trust, the key overarching aims of the Trust (Access, Learning and Enjoyment) and, volunteering opportunities.
