For me, Christmas is a wonderful time of year, revolving around my favourite things: home, family and food.

As a family we have spent an inordinate amount of time this year developing our garden and have loved every minute of it. Our 2 two children have caught the bug and now have their own areas to develop and call their own. It’s fair to say we’re a green fingered bunch.

As members of the National Trust for Scotland, we’ve visited so many of the properties and gardens for inspiration. Particular highlights? The magical gardens at Crarae, which change dramatically from one season to the next and also Kellie Castle, where the history and tales excite the kids as much as the organic gardens delight the grown ups.
Next year, we are definitely making time for a trip up to Inverewe Estate and no doubt countless other properties. One thing is sure, our membership is well used making these days out excellent value family trips.

In the run up to Christmas, I can be a little Jekyll and Hyde. I do sometimes fall into stereotype and leave gifts and cards to the last minute, however, when it comes to festive eating I’ll have mentally prepared it a month before.

As a chef, I have it ingrained to do as much preparation in advance; it's the only route to a successful meal. At the Cook School we pass on the importance of being organised, and people are always amazed at what can be arranged way in advance when preparing an occasion dinner. This is particularly important at Christmas when you really don’t want to be stuck in the kitchen whilst everyone else is enjoying themselves.

My menu has all the ingredients for a great day – stress free, not too complicated but destined to bring out a chorus of oohs and ahhs.
